Warm Winter Pasta

This pasta will warm you up on any winter day!

1 Box Bow Tie Pasta
1 tbs Canola Oil
1 Onion
2 Cups Butternut Squash, Peeled and Cubed
1/2 Cup Sun Dried Tomatoes
1/4 Cup Pine Nuts
2 Minced Garlic Cloves
1/2 Cup Shredded Mozzarella


Bring a pot of salted water to a boil and cook bow ties according to box directions.

In the meantime, add oil to skillet and sauté onion till translucent.

Add butternut squash and cook until tender.

Add sun dried tomatoes, garlic, pine nuts,and cheese. Cook till cheese is melted and pine nuts are toasted.

Add cooked pasta to sauce and garnish with parmesan!
