Quinoa Patties

Perfect for Meatless Mondays and Full of Protein!

1 Cup Quinoa
2-3 eggs
1/2 cup Bread Crumbs
5 Garlic Cloves, Minced
1 Cup Scallions
2 tsp Garlic Powder
2 tsp Basil
2 tsp Parsley
Salt, Pepper
Canola Oil


Cook your quinoa until done.

In the meantime, saute your scallions until golden brown- about 5 minutes on medium/high heat. Add in your garlic at the last minute of cooking and shut off the heat so it doesn’t burn.

When done, pour the quinoa out into a bowl and add breadcrumbs, spices, scallions and garlic and mix. Let it cool, then add the eggs and mix it all up.

Add about 4 tbs canola oil to your skillet, create 3/4 inch patties and cook 3 minutes on each side. Place pan-fried patties on a baking sheet and bake for 15 minutes on 350 to cook the insides.

Serve over salad and enjoy!
