Pistachio Crusted Lemon Sole
2 Filet of Lemon Sole (or any fish you prefer)
1 Cup Pistachios
2 Garlic Cloves
1 Square of Dorot Basil (or 2 tbs fresh basil)
In a food processor, pulse pistachios, garlic cloves, basil, salt & pepper until finely chopped.
Slice a lemon (keep the peel on!) in to circles and lay flat onto the bottom of your Pirex
After rinsing your fish, layer it ontop of the lemon.
Grab the pistachio mixture and press it onto the lemon. The size layer of pistachio will vary with each person; thinner crust for thinner fish, thicker crust for thicker fish.
Spray the top of the crust with pam and bake on 375 for 25 minutes, or until the crust has a slight brown color.
