Mejedra (Rice & Lentils)
1 cup Rice (I prefer Jasmine/Basmati)
1/2 cup Lentils
2 Cups Water
In a pot place 1/2 cup lentils and 2 cups of water. Add salt and a drop of canola oil. Bring to a boil, cover and keep on a medium/low simmer for 15 minutes.
In the meantime rinse your rice. After 15 minutes, add 1 cup of rice to the pot and stir. Keeping it uncovered, bring it back up to a boil, then cover and simmer for 15-20 minutes.
Serve with Caramelized Onions and sour cream!
