Mediterranean Eggs and Hash Browns
1 Yukon Gold Potato
1-2 tbs Canola Oil
Salt and Pepper
Chop the onion and potato into tiny pieces. Add oil, onions, and potatoes to the pan and turn up the heat.
Add spices, don’t be shy! Let the potatoes and onions cook until golden brown- about 12-15 minutes.
Using a spatula, transfer the hash browns to a paper toweled bowl to absorb excess oil.
Using the deliciously flavored oil leftover in the pan, add your eggs. I prefer scrambled, but either way will do.
