Creamy Mushroom Pappardelle
1 Bag Trader Joe's Pappardelle
1 Small Onion, Finely Chopped
1 Small Box Cremini/ Baby Bella Mushrooms, Finely Chopped
2-3 Cloves Garlic, Minced
1/4 Cup White Wine
1/4 Cup Vegetable Broth
2 TBS Goat Cheese
1 TBS Butter
1 TBS Shredded Parmesan Cheese
Start your pot of boiling water for the pasta. When its ready, cook pasta according to package directions. Clean mushrooms thoroughly.
In the meantime, sauté onions and mushrooms until browned, almost caramelized, about 5 minutes. Add minced garlic and cook 1 minute or until golden, but not burnt.
Deglaze the pan with white wine and let the wine reduce to half. Then add in veggie stock and reduce until the sauce is almost thickened but not completely gone.
Add goat cheese and butter and let it melt into the sauce to create a creamy consistency.
Drain pasta and throw straight into the sauce, mix, and finish with a sprinkle of parmesan!
