Chicken Lo Mein
1/2 Box Thin Spaghetti
1 pkg Thin Chicken Cutlets (about 1.5 lbs)
3 Garlic Cloves, Minced
2-3 Scallions, Finely Chopped
5 TBS Light Olive Oil
5 TBS Soy Sauce
1-2 TBS sugar
1/2 Red Pepper, Julienned
1 Carrot, Julienned
1/2 Cup Sugar Snap Peas, Julienned or Whole
1 Zucchini, Quartered and Sliced
1 TSP Sesame Seeds
Get your pasta boiling while you cook the rest of the meal, drain and set aside.
Season your chopped chicken cutlet pieces with salt, pepper, and ginger powder. Sauté chicken in your skillet with the lid on, about 2-3 minutes on each side. Once cooked through, transfer to a plate.
Next up, sauté your garlic and scallions together over medium/high heat until almost browned, about 2-3 minutes.
Add in veggies and mix well, about 3-5 minutes depending on how done you want them. Add chicken back into the pan.
While the veggies cook, add oil, sugar, and soy sauce to the skillet and stir.
Add noodles, sesame seeds, toss and enjoy!
