Spicy Salmon with Leek Quinoa

2 Boneless Salmon Filets
1 tbs Extra Virgin Olive Oil
Salt, Pepper, Garlic Powder, Spicy Paprika
1 tbs Canola Oil
2 Leaks, Cut and Cleaned
2 Minced Garlic Cloves
1 Cup Quinoa
2 Cups water or Broth


Season salmon with olive oil and spices. Bake at 350 for 30 minutes or until done.

In a sauce pan, sauté two leeks with garlic and canola oil. Season with salt.

Add quinoa and water to the pot and stir with the vegetables.

Once the water comes to a boil, cover the pot and let it simmer for 20 minutes till done.

Serve together!
